For whatever reason Google seems to want me to review the hotel instead of the restaurant. I did not stay the night, just dined, so that is what I'll review. It was all overall good, as one would expect, but I will briefly comment on some of the dishes. the first two starter courses were not very remarkable, subtle. it was not a very strong start. I was quite annoyed to be made to eat with my fingers items that were either stuck to the plate with sauce or dusted with paprica, my napkin suffered the consequences. I did not get any tuna in the Ventresca dish, the tomato gelatin was very water. I will note however that the banana half-rounds were overpowered by the mustard. It also affirmed my prejudice against partridge, the taste with the chocolate sauce was excellent but finding small bones was not, the consomé I could have lived without. I think that the absolute star of the night was the pork flan with caviar, a rich, delicious umami explosion, the "Careta" with crayfish in foie sauce was also excellent, as was the scallion juice dish and the squid ink bun. Those dishes really packed in all the flavor i felt was lacking in some of the others. The wine was excellent. Overall a great experience, the service was flawless, discreet and attentive. My qualms are that for the hefty price of the menu, I would have liked to get more flavor in the starting courses, plus not getting my hands dirty and finding bones. Otherwise excellent.
